Ingredients

1 lb boneless, skinless chicken thighs, sliced

2 tablespoons cornstarch

3 tablespoons vegetable oil

3 cloves garlic, minced

1 inch ginger, minced

1/4 cup soy sauce (low sodium recommended)

1/4 cup brown sugar

1 tablespoon rice vinegar

1 tablespoon hoisin sauce

1/2 teaspoon crushed red pepper flakes (adjust for spice)

4 green onions, chopped (white and green parts separated)

Sesame seeds, for garnish

Cooked rice or steamed broccoli, for serving

Instructions

Prep the Chicken: In a bowl, toss the sliced chicken thighs with cornstarch until evenly coated. This will help create a crispy texture when cooked.

Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat. Once hot, add the chicken in a single layer. Cook for about 4-5 minutes, or until browned, flipping halfway through.

Add Aromatics: Lower the heat to medium, then add the minced garlic and ginger to the pan. Stir-fry for about 30 seconds until fragrant.

Make the Sauce: In a bowl, mix the soy sauce, brown sugar, rice vinegar, hoisin sauce, and crushed red pepper flakes. Pour this sauce over the chicken in the skillet.

Cook the Chicken: Increase the heat to medium-high and cook for an additional 2-3 minutes, allowing the sauce to thicken slightly and coat the chicken evenly.

Add Green Onions: Toss in the white parts of the green onions and cook for another minute, stirring well.

Serve: Remove from heat. Serve the Mongolian chicken over cooked rice or steamed broccoli, garnished with the green parts of the green onions and a sprinkle of sesame seeds.
