African Chicken Peanut Stew

Ingredients
  

1.5 lbs chicken thighs, skinless and boneless, cut into bite-sized pieces

2 tablespoons vegetable oil

1 large onion, chopped

2 cloves garlic, minced

1-inch piece of ginger, peeled and grated

1 red bell pepper, diced

2 medium carrots, sliced

1 cup tomato paste

4 cups chicken broth

1 cup smooth peanut butter

1 can (14 oz) coconut milk

1 teaspoon ground cumin

1 teaspoon ground coriander

½ teaspoon cayenne pepper (adjust to taste)

Salt and black pepper, to taste

4 cups chopped kale or spinach

Fresh cilantro and lime wedges for garnish

Instructions
 

In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.

      Add the chicken pieces to the pot, seasoning with salt, black pepper, cumin, coriander, and cayenne pepper. Brown the chicken on all sides, about 5-7 minutes.

        Incorporate the diced red bell pepper and sliced carrots, cooking for an additional 3-4 minutes.

          Stir in the tomato paste, making sure everything is well coated before gradually adding the chicken broth. Bring the mixture to a boil.

            Reduce the heat to low and mix in the peanut butter and coconut milk. Stir until fully incorporated, then allow the stew to simmer for about 20-25 minutes, or until the chicken is cooked through and the sauce thickens.

              Add the chopped kale or spinach and simmer for another 5 minutes until the greens are wilted. Adjust seasoning with additional salt or spices as needed.

                Serve hot, garnished with fresh cilantro and lime wedges for an added zest!
