Ingredients
  

1 cup pearl barley

4 cups water or low-sodium vegetable broth

1 cup milk (dairy or plant-based)

2 tablespoons maple syrup or honey (to taste)

½ teaspoon cinnamon

¼ teaspoon salt

1 ripe banana, sliced

¼ cup chopped nuts (walnuts, almonds, or pecans)

¼ cup dried fruits (raisins, cranberries, or apricots)

Fresh berries for topping (optional)

A drizzle of additional maple syrup or honey (for serving)

Instructions
 

Rinse the pearl barley under cold water to remove any dust or impurities.

    In a large pot, add the rinsed barley along with the 4 cups of water or vegetable broth. Bring to a boil over medium-high heat.

      Once boiling, reduce the heat to low, cover, and let it simmer for about 30-35 minutes, or until the barley is tender and most of the liquid has been absorbed. Stir occasionally to prevent sticking.

        After the barley is cooked, stir in the milk, maple syrup (or honey), cinnamon, and salt. Cook for an additional 5-10 minutes over low heat, stirring frequently, until the porridge reaches your desired creaminess.

          Once the porridge is ready, remove it from heat and let it sit for a few minutes to thicken.

            Serve the porridge warm, topped with sliced banana, chopped nuts, and dried fruits. Add fresh berries and a drizzle of maple syrup or honey for an extra touch of sweetness.
