3 medium-sized carrots, grated

2 medium-sized apples (preferably Granny Smith or Honeycrisp), cored and diced

1/4 cup raisins or dried cranberries

1/4 cup chopped pecans or walnuts

1/4 cup plain Greek yogurt or mayonnaise (for a creamier texture)

1 tablespoon honey or maple syrup

1 tablespoon lemon juice

1/2 teaspoon cinnamon

Salt and pepper to taste

Fresh mint leaves for garnish (optional)

Instructions
 

In a large mixing bowl, combine the grated carrots and diced apples.

    Add the raisins or dried cranberries, and chopped nuts to the bowl; mix until evenly distributed.
