Carrot Cake Oatmeal

Ingredients
  

1 cup rolled oats

2 cups almond milk (or any milk of your choice)

1 medium carrot, grated

1/4 cup brown sugar or coconut sugar

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp ginger powder

1/4 cup raisins (optional)

1/4 cup chopped walnuts (or pecans, optional)

1 tsp vanilla extract

A pinch of salt

Cream cheese or yogurt for topping (optional)

Shredded coconut for garnish (optional)

Fresh mint leaves for garnish (optional)

Instructions
 

In a medium saucepan, combine the rolled oats, almond milk, grated carrot, brown sugar, cinnamon, nutmeg, ginger powder, and salt. Stir well to combine.

    Bring the mixture to a gentle boil over medium heat, then reduce the heat to low and let it simmer for about 5-7 minutes, stirring occasionally, until the oats are cooked and creamy.

      If you like your oatmeal a bit sweeter, feel free to add more brown sugar or adjust the sweetness according to your taste.

        In the last minute of cooking, stir in the raisins and walnuts (if using) and the vanilla extract.

          Once the oatmeal is ready, remove it from the heat and let it cool for a minute.

            Serve the oatmeal in bowls. Optionally, top with cream cheese or yogurt for a rich flavor, and sprinkle with shredded coconut and mint leaves for added freshness.
