This hearty dish combines layers of tender russet potatoes, crispy bacon, and a blend of sharp cheddar and mozzarella cheese, all baked to gooey perfection. Ingredients
  

6 medium-sized russet potatoes, peeled and diced

8 slices of thick-cut bacon, cooked and crumbled

1 cup sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1/2 cup diced green onions

4 large eggs

1 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Cooking spray or butter for greasing the baking dish

Instructions
 

Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with cooking spray or butter.

    In a large pot, bring salted water to a boil. Add the diced potatoes and cook for about 10-12 minutes, until just tender. Drain and set aside to cool slightly.

      In a mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined.

        In the greased baking dish, layer half of the cooked potatoes evenly on the bottom.

          Sprinkle half of the crumbled bacon, half of the cheddar cheese, and half of the mozzarella cheese over the potatoes.

            Add another layer of the remaining potatoes, followed by the remaining bacon and shredded cheeses.

              Pour the egg mixture evenly over the layers, making sure it seeps through the ingredients.

                Top with diced green onions.

                  Cover the dish with aluminum foil and bake for 25 minutes.

                    After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

                      Let the casserole cool for a few minutes before slicing. Serve warm and enjoy!
