Cheesy Masala Beans on Toast

Ingredients
  

1 can (400g) mixed beans (kidney, cannellini, and black beans) drained and rinsed

1 tbsp olive oil

1/2 medium onion, finely chopped

2 cloves garlic, minced

1 tsp ginger, grated

1 medium tomato, diced

1 tsp garam masala

1/2 tsp cumin powder

1/2 tsp chili powder (adjust to taste)

Salt and pepper to taste

100g cheddar cheese, grated

4 slices of whole grain bread

Fresh cilantro for garnish (optional)

Instructions
 

Sauté the Base: In a medium-sized skillet, heat olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 3-4 minutes.

    Add Aromatics: Stir in the minced garlic and grated ginger, and cook for another 1-2 minutes until fragrant.

      Incorporate Tomato: Add the diced tomato to the skillet, and cook until it softens, about 2-3 minutes.

        Spice it Up: Sprinkle in the garam masala, cumin powder, chili powder, salt, and pepper. Mix well and allow the spices to bloom for about 1 minute.

          Mix in Beans: Fold the rinsed mixed beans into the skillet. Stir gently to combine all ingredients and let it cook for another 5-7 minutes over low heat until warmed through.

            Cheesy Goodness: Sprinkle the grated cheddar cheese over the bean mixture. Cover the skillet for a couple of minutes to let the cheese melt, or you can transfer it to a broiler-proof dish and broil for 1-2 minutes until bubbly and golden.

              Toast the Bread: While the bean mixture is cooking, toast the slices of whole grain bread to your desired level of crispiness.

                Assemble and Serve: Place the toasted bread on serving plates. Scoop the cheesy masala beans generously over the toast, and garnish with chopped fresh cilantro if desired.
