Ingredients

6 cups day-old bread (like brioche or challah), cut into cubes

4 large eggs

1 cup milk

1/2 cup heavy cream

1/3 cup granulated sugar

2 teaspoons vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1/2 cup brown sugar

1 tablespoon cinnamon (for topping)

Powdered sugar (for dusting, optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a standard muffin tin with non-stick spray or butter.

Prepare the Bread: Place the cubed bread in a large mixing bowl. This will help it soak up all the delicious flavors.

Mix Wet Ingredients: In another bowl, whisk together the eggs, milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, and salt until well combined.

Combine: Pour the egg mixture over the bread cubes. Gently fold to ensure all the bread pieces are soaked, allowing it to sit for about 10-15 minutes to absorb the liquid.

Prepare Topping: In a small bowl, mix together the melted butter, brown sugar, and 1 tablespoon of cinnamon. This will create a sweet, gooey topping for your muffins.

Fill Muffin Tin: Spoon the soaked bread mixture into the muffin tin, filling each cup about 3/4 full. Then, drizzle a small amount of the cinnamon-brown sugar mixture over the top of each muffin.

Bake: Place the muffin tin in the preheated oven and bake for about 25-30 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

Cool & Serve: Allow the muffins to cool in the tin for about 10 minutes before transferring them to a wire rack. Dust with powdered sugar if desired. Serve warm and enjoy the delightful flavors of cinnamon and sugar!
