1 cup cooked quinoa

1 cup cherry tomatoes, halved

1 small cucumber, diced

1 bell pepper, diced (any color)

1/2 cup canned chickpeas, rinsed and drained

1/4 cup feta cheese, crumbled

1/4 cup olives, pitted and halved

1/4 cup hummus (store-bought or homemade)

2 tablespoons olive oil

1 tablespoon lemon juice

Salt and pepper to taste

Fresh herbs (such as parsley or mint) for garnish

Instructions
 

In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, bell pepper, chickpeas, feta cheese, and olives.

    In a small bowl, whisk together olive oil, lemon juice, salt, and pepper to create a dressing.
