Dump-and-Bake Chicken Tzatziki Casserole

Ingredients
  

2 cups cooked, shredded chicken (rotisserie works great)

1 cup uncooked whole grain or regular penne pasta

2 cups chicken broth

1 cup cucumber, diced

1 cup cherry tomatoes, halved

1 cup Greek yogurt

1/2 cup feta cheese, crumbled

1/4 cup fresh dill, chopped (or 1 tablespoon dried dill)

3 cloves garlic, minced

1 tablespoon lemon juice

1 teaspoon olive oil

Salt and pepper to taste

1 cup shredded mozzarella cheese (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil.

    Combine the Base: In the prepared baking dish, combine the cooked shredded chicken, uncooked penne pasta, diced cucumber, halved cherry tomatoes, chicken broth, Greek yogurt, feta cheese, dill, minced garlic, lemon juice, and olive oil. Season with salt and pepper to taste.

      Mix Thoroughly: Use a spatula or wooden spoon to thoroughly mix the ingredients together until everything is well combined and the pasta is evenly distributed.

        Bake the Casserole: Cover the baking dish tightly with aluminum foil. Bake in the preheated oven for about 30 minutes.

          Add Mozzarella: After 30 minutes, remove the foil and sprinkle the shredded mozzarella cheese evenly across the top of the casserole. Return to the oven (uncovered) and bake for an additional 15-20 minutes, or until the mozzarella is melted and bubbly and the pasta is cooked through.

            Cool and Serve: Remove the casserole from the oven and let it cool for about 5-10 minutes before serving. Garnish with extra dill or cucumber if desired.
