4 boneless, skinless chicken thighs

1 cup long-grain white rice

2 cups chicken broth

1 cup cucumber, finely diced

1 cup Greek yogurt

1/4 cup fresh dill, chopped

2 tablespoons lemon juice

2 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

1/2 teaspoon onion powder

    Prepare Rice Layer: In a large baking dish, spread the uncooked rice evenly at the bottom.
