12 oz (340g) pasta (penne or fusilli)

1 tbsp olive oil

4 cloves garlic, minced

1 can (14 oz/400g) diced tomatoes (with juices)

2 cups vegetable broth

1 cup heavy cream

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional for heat)

Salt and black pepper to taste

1 cup freshly grated Parmesan cheese

Fresh basil leaves, for garnish

Instructions
 

In a large pot or deep skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to let it burn.

    Add the diced tomatoes with their juices, vegetable broth, heavy cream, Italian seasoning, red pepper flakes (if using), salt, and pepper. Stir well to combine.

      Bring the mixture to a gentle simmer.

        Add the pasta, ensuring it is submerged in the liquid. Bring everything to a boil and then reduce the heat to low. Cover and let it cook for about 10-12 minutes, or until the pasta is cooked al dente, stirring occasionally.
