Ingredients

1 lb (450g) chicken breast, diced

1 lb (450g) gnocchi (store-bought or homemade)

3 tablespoons olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach

½ teaspoon red pepper flakes (optional)

Salt and pepper, to taste

½ cup heavy cream

½ cup Parmesan cheese, grated

Fresh basil leaves, for garnish

Instructions

Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions or until they float to the surface (2-3 minutes). Drain and set aside.

Sauté the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the diced chicken, season with salt and pepper, and cook until golden and cooked through (about 5-7 minutes). Remove the chicken from the skillet and set aside.

Prepare the Garlic Sauce: In the same skillet, add the remaining tablespoon of olive oil and the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn it.

Add Vegetables: Stir in the cherry tomatoes and cook for 2-3 minutes until they start to soften. Add the spinach and red pepper flakes, if using, and cook until the spinach begins to wilt.

Combine Ingredients: Return the cooked chicken to the skillet, then add the gnocchi. Pour in the heavy cream and stir to combine. Let it cook for another 2-3 minutes, allowing the flavors to meld.

Finish with Cheese: Reduce the heat to low, sprinkle in the grated Parmesan cheese, and stir until the cheese is melted and the sauce is creamy. Season with additional salt and pepper to taste.

Serve: Garnish with fresh basil leaves before serving. Enjoy your delicious Garlic Chicken Gnocchi Skillet!
