Ingredients

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup tahini

2 tablespoons olive oil, plus more for drizzling

3 tablespoons lemon juice

2 cloves garlic, minced

1 teaspoon ground cumin

Salt and pepper, to taste

1/4 cup water (more as needed)

1/2 cup diced cucumbers

1/2 cup halved cherry tomatoes

1/4 cup Kalamata olives, pitted and sliced

1/4 cup crumbled feta cheese

2 tablespoons chopped red onion

2 tablespoons fresh parsley, chopped

Paprika, for garnish

Pita chips or fresh pita, for serving

Instructions

In a food processor, combine the chickpeas, tahini, olive oil, lemon juice, garlic, and ground cumin. Blend until smooth.

Add salt and pepper to taste, then gradually add water while blending until you reach your desired consistency — it should be creamy and spreadable.

Transfer the hummus to a serving dish and use the back of a spoon to create a shallow well in the center.

Arrange the diced cucumbers, halved cherry tomatoes, sliced olives, crumbled feta, red onion, and fresh parsley over the hummus.

Drizzle olive oil over the top and sprinkle with paprika for added color and flavor.

Serve immediately with pita chips or fresh pita for dipping.
