1 lb ground beef

4 medium potatoes, peeled and diced

1 medium onion, chopped

3 cloves garlic, minced

1 cup frozen mixed vegetables (peas, carrots, and corn)

1 can (10.5 oz) cream of mushroom soup

1 cup shredded cheddar cheese

1 tsp paprika

1 tsp salt

1/2 tsp black pepper

2 tbsp olive oil

Fresh parsley, for garnish (optional)

Instructions
 

Preheat the oven: Start by preheating your oven to 350°F (175°C).

    Cook the beef: In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for about 2-3 minutes until the onion becomes translucent.

      Add ground beef: Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.

        Incorporate potatoes and veggies: Stir in the diced potatoes and frozen mixed vegetables. Mix well to combine everything.

          Add soup and seasonings: Pour in the cream of mushroom soup and add paprika, salt, and black pepper. Stir until thoroughly mixed, ensuring all ingredients are coated with the soup.

            Transfer to baking dish: Pour the mixture into a greased 9x13-inch baking dish, spreading it evenly.

              Top with cheese: Sprinkle the shredded cheddar cheese on top of the casserole, covering it completely.

                Bake: Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

                  Garnish and serve: Once out of the oven, let it sit for about 5 minutes. Garnish with fresh parsley if desired, and serve hot.
