1.5 lbs boneless, skinless chicken thighs

1/2 cup honey

1/4 cup soy sauce (preferably low sodium)

4 cloves garlic, minced

1 tablespoon fresh ginger, minced

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 teaspoon red pepper flakes (adjust to taste)

1 tablespoon cornstarch

2 tablespoons water

Salt and black pepper, to taste

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prepare the Marinade: In a medium bowl, whisk together honey, soy sauce, minced garlic, ginger, rice vinegar, sesame oil, and red pepper flakes until fully combined. Set aside.

    Marinate the Chicken: Place the chicken thighs in a large resealable plastic bag or a bowl. Pour the marinade over the chicken, making sure all pieces are well coated. Seal the bag or cover the bowl and marinate in the refrigerator for at least 30 minutes (or up to 4 hours for maximum flavor).

      Cook the Chicken: Heat a large skillet over medium-high heat. Remove the chicken from the marinade (reserve the marinade) and season with salt and black pepper. Add the chicken to the skillet, cooking for 5-7 minutes on each side, or until the chicken is browned and cooked through (internal temperature should reach 165°F).

        Thicken the Sauce: In the meantime, pour the reserved marinade into a small saucepan. In a separate small bowl, mix cornstarch with water to create a slurry, then add it to the saucepan. Bring the marinade to a boil, then reduce heat and let it simmer for about 3-4 minutes, or until thickened.

          Combine and Serve: Once the chicken is cooked, pour the thickened honey garlic sauce over the chicken in the skillet. Cook for an additional minute, ensuring each piece is coated in the sauce.

            Garnish: Remove from heat and garnish with sliced green onions and sesame seeds. Serve hot over rice or paired with steamed vegetables.
