Ingredients
  

8 oz whole grain pasta (fusilli or penne)

1 cup cherry tomatoes, halved

1 small cucumber, diced

1 bell pepper (red or yellow), diced

1 cup fresh basil leaves, torn or roughly chopped

1/4 cup red onion, finely chopped

1/4 cup olive oil

Juice of 2 lemons

Zest of 1 lemon

1 tbsp maple syrup (optional, for sweetness)

Salt and black pepper, to taste

1/3 cup nutritional yeast (optional, for a cheesy flavor)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the whole grain pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool down. Set aside.

    Prepare the Vegetables: While the pasta is cooking, chop the cherry tomatoes, cucumber, bell pepper, and red onion. Place them in a large mixing bowl.

      Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, lemon zest, maple syrup (if using), salt, and black pepper until well combined.

        Combine Ingredients: Add the cooled pasta to the bowl with the vegetables. Pour the dressing over the pasta and vegetable mixture. Toss gently to combine everything evenly.

          Add Fresh Herbs and Nutritional Yeast: Fold in the fresh basil leaves and nutritional yeast if you’re using it. Taste and adjust the seasoning if necessary.

            Chill and Serve: Cover the salad and let it sit in the refrigerator for at least 30 minutes to allow the flavors to meld together. Serve chilled or at room temperature.
