4 boneless, skinless chicken thighs

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 cup chicken broth

1 cup orzo pasta

1 cup cherry tomatoes, halved

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1 cup baby spinach

1/2 cup heavy cream

1/4 cup grated Parmesan cheese

Fresh basil leaves, for garnish

Instructions
 

Season chicken thighs with salt and pepper on both sides.

    In a large skillet, heat olive oil over medium-high heat. Add the chicken thighs and sear until golden brown, about 5-7 minutes per side. Remove the chicken from the skillet and set aside.

      In the same skillet, add minced garlic and cook for about 30 seconds until fragrant.

        Pour in the chicken broth, scraping up any browned bits from the bottom of the pan.

          Add orzo pasta, cherry tomatoes, and dried Italian herbs to the skillet. Stir to combine.

            Return the chicken thighs to the skillet, nestling them into the orzo mixture. Bring to a gentle simmer.

              Cover and cook for about 15 minutes, or until the orzo is tender and the chicken is cooked through.

                Stir in baby spinach, heavy cream, and grated Parmesan cheese. Cook for an additional 2-3 minutes until the spinach is wilted and the sauce is creamy.

                  Adjust seasoning with more salt and pepper, if needed.

                    Serve hot, garnished with fresh basil leaves.
