Ingredients
  

2 lbs boneless, skinless chicken thighs (or breasts if preferred)

1 cup onion, finely chopped

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 can (15 oz) crushed tomatoes

1 cup coconut milk (or heavy cream)

4 tablespoons butter

2 tablespoons garam masala

1 tablespoon ground cumin

1 tablespoon paprika

1 teaspoon turmeric

1 teaspoon chili powder (adjust for spice level)

2 teaspoons salt (to taste)

Fresh cilantro, for garnish

Cooked basmati rice or naan, for serving

Instructions
 

Prep the Chicken: Cut the chicken thighs into bite-sized pieces and season them with salt and paprika.

    Sauté Aromatics: In a skillet over medium heat, melt 2 tablespoons of butter. Add onions and sauté until they are translucent (about 5 minutes).

      Mix Ingredients: In a large slow cooker, combine the sautéed onions, garlic, ginger, crushed tomatoes, coconut milk, garam masala, cumin, turmeric, chili powder, and the remaining butter.

        Add Chicken: Gently fold the seasoned chicken pieces into the sauce mixture until well-coated.

          Slow Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and cooked through.

            Final Touch: Once cooking is complete, stir the mixture to combine, and adjust seasoning with additional salt if needed.
