Ingredients

For the Filling:

2 cups fresh strawberries, hulled and sliced

2 cups ripe peaches, pitted and sliced

1/4 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 tablespoon cornstarch

1/2 teaspoon cinnamon

For the Crisp Topping:

1 cup all-purpose flour

1 cup old-fashioned rolled oats

1/2 cup brown sugar, packed

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, melted

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

Prepare the Filling: In a large mixing bowl, combine the sliced strawberries and peaches. Add the granulated sugar, lemon juice, vanilla extract, cornstarch, and cinnamon. Toss gently until the fruit is evenly coated. Transfer the mixture to a greased 9x13 inch baking dish.

Make the Crisp Topping: In another bowl, mix together the flour, rolled oats, brown sugar, baking powder, and salt. Stir in the melted butter until the mixture resembles coarse crumbs.

Assemble the Crisp: Evenly sprinkle the crisp topping over the fruit filling in the baking dish.

Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the topping is golden brown and the fruit is bubbly.

Serve: Allow the crisp to cool for about 10 minutes before serving. This dish is delicious on its own or topped with a scoop of vanilla ice cream.
