Ingredients
  

2 cups cooked and chopped chicken breast

1 cup canned black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 cup grape tomatoes, halved

1 avocado, diced

1 cup red bell pepper, chopped

1/2 cup red onion, finely chopped

1/2 cup shredded cheese (cheddar or Mexican blend)

1 cup romaine lettuce, chopped

1/4 cup fresh cilantro, chopped

1 lime, juiced

3 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine the chopped chicken, black beans, corn, grape tomatoes, avocado, red bell pepper, red onion, shredded cheese, and romaine lettuce.

    In a separate small bowl, whisk together the lime juice, olive oil, chili powder, cumin, salt, and pepper until well combined.

      Pour the dressing over the salad mixture and gently toss until all the ingredients are evenly coated with the dressing.

        Add the chopped cilantro and fold it into the salad for a fresh burst of flavor.

          Taste and adjust seasoning with additional salt and pepper if desired.
