2 lbs boneless, skinless chicken thighs

1 medium onion, diced

4 cloves garlic, minced

2 medium tomatoes, diced

2 chipotle peppers in adobo sauce, chopped (plus 1 tablespoon of the sauce)

1 teaspoon ground cumin

1 teaspoon dried oregano

1 cup chicken broth

2 tablespoons vegetable oil

Salt and pepper to taste

Fresh cilantro, for garnish

Lime wedges, for serving

Corn tortillas, warmed

Instructions
 

Cook the Chicken: In a large saucepan, heat 1 tablespoon of vegetable oil over medium heat. Add the chicken thighs and season with salt and pepper. Brown the chicken on both sides, about 4-5 minutes per side, until golden. Remove from the pan and set aside.

    Sauté the Aromatics: In the same pan, add the remaining tablespoon of oil. Add the diced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

      Prepare the Sauce: Add the diced tomatoes, chipotle peppers, cumin, oregano, and chicken broth to the pan. Stir to combine and bring to a simmer.

        Shred the Chicken: Return the browned chicken thighs to the sauce, cover the pan, and let it simmer on low heat for about 20-25 minutes, or until the chicken is tender and easily shreds with a fork.

          Shred and Mix: Remove the chicken from the pan and shred it using two forks. Return the shredded chicken to the sauce and mix well. Taste and adjust seasoning with more salt, pepper, or additional adobo sauce if desired.

            Assemble the Tacos: On warmed corn tortillas, add a generous portion of the chicken tinga, then sprinkle with fresh cilantro. Serve with lime wedges on the side for squeezing over the tacos.
