Ingredients

1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1/4 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk (or regular milk with 1 tbsp vinegar added)

2 large eggs

1/4 cup melted butter (plus extra for the pan)

1 teaspoon vanilla extract

1/2 cup semi-sweet chocolate chips

Optional toppings: whipped cream, fresh berries, maple syrup, or powdered sugar

Instructions

In a large mixing bowl, combine the all-purpose flour, cocoa powder, sugar, baking powder, baking soda, and salt. Whisk together until well mixed.

In another bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract until smooth.

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; some lumps are okay. Fold in the chocolate chips.

Preheat a non-stick skillet or griddle over medium heat. Lightly grease it with a little melted butter.

Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

Flip the pancakes and cook for an additional 1-2 minutes until the second side is cooked through and slightly browned.

Repeat with the remaining batter, greasing the skillet as needed.

Stack the pancakes on plates and serve warm. Add your favorite toppings such as whipped cream, fresh berries, maple syrup, or a dusting of powdered sugar for extra indulgence!
